What is the page size, margin size, and text size of a standard hard back book, specifically a book like Harry Potter, or Eragon. So like, is it 12pt font, 8.5x11 paper size, etc.

There isn't a single standard. There are common book sizes (look at a shelf, you'll see that many books are the same physical size -- 6x9 is common for paperbacks) but there is no single standard as to size, margins, font, and so forth. Those features are set on a per-book, or per-publisher perhaps, basis by a designer. If you want to copy one, find a book you think is well-laid-out and take a ruler to it.
Some books include a note called a colophon describing how the book is typeset, including which font and (sometimes) size is used. It's usually in the very front or back of the book. I believe some Harry Potter books have a colophon.
