I know that his mother was muggle-born but she was a witch when she gave birth to Harry after all.
So if both his parents were magical, isn't he a pureblood?

No his grandparents on his Mother's side were muggles. A pureblood has to be totally pure.

Because most wizards are halfbloods. It's like saying an Asian woman and Caucasian man have a child. This child is half of each race. If that child marries someone who is the same Asian ethnicity as the mother and has a child with their spouse, that child won't be fully Asian now will it? It'd be 3/4th.

In Harry Potter, there's just purebloods, halfbloods, and muggleborns. Any child not from two Muggle parents or two pureblood parents is considered halfblood.

Yes Harry's mother is a witch

but she IS muggle born.

To become pureblood you must have parents who are descendents of only magical beings and even the slightest muggle in you can taint your blood.

No, his mom is still technically a muggle and his dad is a pureblood.

Soo...pureblood +muggle= halfblood.

His Aunt clearly wasn't magical and didn't understand anything about that. If he was pureblood, everyone in his family would be a witch or a wizard.

His mom was a human, his dad was a PUREblood, which makes harry a halfblood.

There are three types of wizard: Muggle-born, half-blood and pure blood.

If you think about it, half-blood is in the middle. So Muggle-born + pure-blood (opposite ends of the spectrum) would = half-blood (in the middle).

No, because he still has Muggle blood in him on his mom's side. Remember, it encompasses not just the first generation, but the others as well.
